Tomato, Olive and Basil Tart

Delicious for a light lunch, servedwith a chrispy salad

Preparation Time: 20 mins
Cooking: 20 mins

tartIngredients for base:

  • 1 Cup Flour
  • 1 Cup Grated Cheese
  • 125g Butter
  • Combine in the mixture by hand.
  • Press into tart dish. Bake blind for 10 minutes.

Filling:

  • 1/2 Onion - chopped
  • 15 de-pipped Calamata Olives
  • 2 Cloves Garlic, crushed
  • 2 Tins whole tomatoes – drained & chopped
  • ¼ Cup Fresh Basil - chopped
  • 100gr Feta Cheese
  • 1tsp Balsamic Vinegar
  • 2 Tablespoons Butter
  • Course Salt & Ground Pepper

Method:

  • Heat butter in a frying pan. Add garlic and onion and fry until soft.
  • Add drained tomatoes (no juice!) and cook until thickened.
  • Add balsamic vinegar and season with black pepper and salt.
  • Spoon filling into the pastry case (leaving any liquid behind).
  • Spoon the olives & basil & feta cubes into the tomato mixture.
  • Bake for 15 minutes on 120 degrees.

Remove from oven & sprinkle a handful of Cheddar or Parmesan Cheese & bake for another
10 mins!
