Pasta Balsamic

Pasta Ingredients:

  • 1 Packet of Penne Pasta
  • 1 Cup of Grated Pecorino or Cheddar Cheese
  • 1 Tbls Butter
  • Black Balsamic Vinegar

Pasta Method:

  • Boil al-dente & drain
  • Put back into pot with blob of butter and salt, and melt into pasta
  • Add cup of cheese and melt into pasta until sticky
  • Add 4-5 tbls balsamic vinegar (pasta turns light brown)

Sauce Ingredients:

  • 1 Tin – Whole Peeled Tomatoes (or 1 tin whole baby tomatoes)
  • ½ Cup White Wine
  • 1 Clove of Garlic
  • 6 Basil Leaves

Sauce Method:

  • Lightly fry garlic in olive oil ad add tin of whole peeled tomatoes (drain tin, only add tomatoes)
  • Add wine, let simmer and reduce
  • Mash tomatoes slightly (must still be chuncky)
  • Break basil into sauce

Serve Pasta and blob tomato sauce on top and garnish!

Garnish:

Crumbed Feta cheese and Toasted Pine Nuts or Almonds

Feeds 4 -6 people
